This light, pale, hazy red is predominantly super (100+ year) old ungrafted and organic Listán Negro, splashed with 10% Listán Blanco. This smoky and weird wine showcases Tenerife's volcanic soils, alongside pink grapefruit, wild plum, wild raspberry, scrubby rosemary and stone. Fermented for 4 days on skins in concrete before finishing in old (aka neutral) 500L barrels, where it remained for 3 months’ rest. Acidity is high and easy, buoying up a lingering, saline finish.
