Paloma is a blend of Grenache and Colombard from Adissan. This wine is all cherry and cocoa with a floral touch and nervy acidity that unfolds into a long finish. The Grenache is from lacustrine limestone and Colombard grown on a basaltic tongue. 15 days of maceration in whole bunches in stainless steel tanks. Refreshing and elegant. Jean-Louis Pinto is the man behind the micro-negociant project Es D’aqui. He works only with fruit from organic and biodynamic vineyards and has a minimal intervention approach in the cellar; all the wines are made without temperature control or added sulphur.
