This 100% Cabernet Sauvignon from the Rademacher vineyard, a small 1 acre vineyard was planted in the late 90s, has never seen chemical applications. The grapes grow next to a eucalyptus windbreak and a small creek rich with pennyroyal, blackberry, herbs and many happy birds. Due to the 2020 fires, this cab vineyard was picked earlier to avoid smoke taint. Given the ripening year, it was also perfect timing.After picking, the grapes are direct pressed onto sauvignon blanc skins. These two macerate for a “secret” amount of time before being pressed off to neutral barrel for 3 months. Soaking on white skins have imparted a small amount of golden colour to the very light pink juice and given a creamier note on the aromatics. White strawberry, wild mint, wine gummy and creek-bed aromatics are propelled by bright acidity, lower alcohol, and additional texture from the sauvignon blanc skins
