This 100% Cabernet Sauvignon from the Rademacher vineyard, a small 1 acre vineyard was planted in the late 90s, has never seen chemical applications. The grapes grow next to a eucalyptus windbreak and a small creek rich with pennyroyal, blackberry, herbs and many happy birds. Done in small picks, destemmed into open-top fermenters, with manual punch-downs done until dry and then pressed into neutral oak barrels to age for 12 months. Inky dark fruit like black cherry and currant as well as eucalyptus, black pepper, and cedar are present. Surprisingly fresh and gluggable with a 14.7% abv. This could be laid down or drunk immediately.
